We wanted to introduce you to our fantastic Fall 2017 Healthy Bytes interns! They have been with the team since the start of Fall semester – and we are incredibly grateful for the work that they do to support your private practices daily. Please say hello!
Lauren comes to New York from Sherwood, Arkansas. She is pursuing her MPH in Nutrition at New York University. She is excited to learn about health insurance and help dietitians connect with patients.
Lauren loves to cook and bake and to make healthy substitutions in her recipes. For example, she’ll use Greek yogurt in place of sour cream or mayo; unsweetened applesauce instead of vegetable oil. Her latest go-to dinner is this recipe for an Oven Roasted Autumn Medley: roasted sweet potatoes, apples, onions, turkey sausage, and herbs. “Just cut everything up and pop it in the oven for 45 minutes – it’s so simple and delicious!” Lauren says.
When Lauren was 16 years old, her parents surprised her by sending her off to culinary camp in Vermont, which she describes as "…absolutely terrifying and cool." We’re glad she still loves being creative in the kitchen!
Joe comes to Healthy Bytes from Southwick, MA. He is a junior at NYU studying Global Public Health and Sociology. He’s eventually planning to apply to law school, and potentially get his Masters in Public Health. His end goal is to get involved in the legal side of health policy, specifically public health insurance. This semester, he's most excited to get a full understanding of health insurance firsthand during his internship here at Healthy Bytes. Joe says, “My favorite thing about Healthy Bytes - besides the Monday breakfasts and Wednesday potluck lunches - is how close-knit the entire staff is. It feels like I'm working with a group of good friends!”
In his free time, Joe loves to explore coffee shops around NYC. He also takes time to go hiking when the weather cooperates! Joe is fluent in Italian and spent this past summer in Florence studying abroad. We’re jealous! Joe said while he was in Italy, he loved traveling on long weekends, and his favorite place to visit was Capri.
Wangui is currently studying at NYU’s College of Global Public Health, getting her MPH with a concentration in global health. After graduation, she plans to work in development either here in the U.S. or abroad. She values her time at Healthy Bytes, “…because I felt that I would learn a lot about the U.S. healthcare system and how insurance works. I am most excited to learn how dietitians are contracted with different insurance companies to help grow their business.”
Wangui originally is from California. On weekends, she heads to the movies, museums, parks and various NYC-area restaurants.
Jen is a sophomore attending Rutgers University School of Arts and Science in New Brunswick and is passionate about the sciences. After graduating, she wants to continue her studies but hasn’t mapped out her course just yet. Jen joined us at Healthy Bytes because the daily work was very well-suited to her skills: “I also work at a pediatrician's office, and a lot of the work I do there is very relevant to my Healthy Bytes internship,” she said. Thus far, Jen has learned about eligibility and benefits checks for nutritional counseling benefits. She also is learning much about the start-up culture around our office and how quickly we’re growing as a company!
During her free time, Jen listens to music on Spotify, spends time on Snapchat, surfs Instagram for aesthetic places to visit, and chats with her friends on Facebook or iMessage. Jen also loves traveling and shares that her favorite place to visit thus far has been Hakone, Japan. During her time there, she stayed in a traditionally-styled countryside hot spring resort, where she got to bathe in a hot spring every night and try new, intricate Japanese traditional dishes. We’re putting Hakone on our bucket list!
