Happy RDN Day – Celebrate with “Pi!”

March 14th is extra sweet this year: we get to celebrate both National RDN Day and “Pi” Day! Around the world people celebrate March 14th as “Pi” day to pay homage to everyone’s favorite Greek letter and mathematical symbol, π. If you remember back to geometry, π represents the ratio of a circle’s circumference to its diameter: roughly 3.14. What better way to celebrate Pi Day and National RDN Day than with a roundup of pie recipes from our RDN friends and colleagues?

“It’s the memory that comes with the pie: when I arrived in Cincinnati back in 1981 to start my dietetic internship my roommate Deb from York, PA made Shoo-fly Pie! Growing up in Los Angeles CA, I had never heard of this among other Pennsylvania Dutch foods!”

Tracee Yablon Brenner: Berry Cashew Desert Pizza

“I love this seasonal pie with fresh berries and cashew cream which is deliciously plant-based.”

Tracee Yablon Brenner: Sweet Potato Pie

“Growing up we had a family friend make a sweet potato pie for the holidays that I loved. I switched it up with an almond crust and adding pecans on top.”
