Snow Day Eats

With winter well underway, we reached out to some friends and colleagues for their favorite Snow Day recipes and activities. The next time you’re snowed in – or just looking for a cozy day at home – try out some of these recipes and enjoy!

Healthy Ramen Soup

Katie Pfeffer-Scanlan, MS, RD

“I make this soup in the beautiful mountains of Boulder, CO! This soup is so easy and comforting! My favorite snow day activity is doing puzzles, walking in the snow, and online shopping!”

Naturally-Sweetened Black Bean Brownies

Charlene Pors, BSc, RD

“I live in Revelstoke, BC, Canada - where snow days are a regular occurrence in the winter. If I am not outside enjoying the white fluffy stuff by skiing or snowboarding - you can find me in the kitchen baking. There is something comforting about sipping a hot coffee and watching the snow fall while baking some tasty treats. My favorite is these naturally sweetened black bean brownies, which also happen to pack well for your winter activities.”

Corn Chowder with Potatoes and Basil

Ginger Hultin, RDN

“I'm in Seattle, WA and on a snow day I stay inside and bake/cook. My husband loves shoveling snow so he'll be outside doing that for hours.”

Gouda Tuna Noodle Casserole

Cara Harbstreet, MS, RD, LD

“I live in Kansas City, where we go from 60 degrees and windy (like yesterday) to single digits and icy (like today). I look forward to warming comfort foods that remind me of things I enjoyed as a kid. These days, I like baking savory recipes like casseroles and while they're in there, the pup and I bundle up and play in the yard - he loves snow!”

Roasted Vegetable Lasagna

Tracee Yablon Brenner, RDN

“I live in Grandview on Hudson, New York overlooking the Tappan Zee Bridge so it gets windy here. I love to batch cook when it snows. This Roasted Vegetable Lasagna is the perfect recipe for that as I can roast extra veggies for a Roasted Eggplant and Zucchini Soup and extra Cashew Pesto as a dip with veggies. These are all recipes my family loves. We would play games like Rummikub and watch movies or binge watch a new Net-Flix series.”

Rainy Day Chocolate Chip Cookies

Diana Kobus Rice, RD

“I developed this recipe when snowed in with my toddler one day! (I called it "Rainy Day" though because I was desperately hoping that was the last of the snow we'd get last year.”

Creamy Vegan Cauliflower Chowder

Karla Moreno-Bryce, MDA RD LD

“I live in Minneapolis, MN and it's actually snowing today! This creamy vegan cauliflower chowder is what I crave on snowy days because it reminds me of comfort food. And on a snowy day, it makes it a great cozy dinner idea. Lately, my favorite snow day activity is simply to put on my snow boots, bundle up and walk/play around a lake. It's a simple activity but so enjoyable!”

Better for You Chili

Elizabeth Ward, MS, RD

“I like this on snowy days because it's simple to make, I usually have all the ingredients in the house because they are common and useful, and it's warm! Besides shoveling, I like to cook on snowy days! It's a good time to get ahead of the meal-prep game.”

Oat and Buckwheat Waffles

Kelly Jones, MS, RD, CSSD

“I’m outside of Philadelphia and we get plenty of snow! While I make buckwheat pancakes most weekends, making waffles takes a bit more time, which I clearly have on a snow day when I’m not leaving the house. They are a warm, fluffy and comforting breakfast to give you energy for shoveling. While I loved making igloos outside with my siblings all the way through college, having hot chocolate by the fire after shoveling is more my speed now!”

Chai Waffles with Sautéed Pears

Kara Lydon Evancho, RDN

“I’m in Boston, MA and on a snowy day, there’s nothing I love more than spending a little time cooking up a warm, comforting breakfast. These chai waffles with sautéed pears are a favorite – the hint of spice warms you from the inside out! After a slow morning, my favorite snow day activity is curling up with a good book, a cozy blanket and warm cup of tea. Snow days are the perfect days for self-care!”

Caribbean Chickpea Curry

Ayla Charissa, MS, RDN

I am in St Thomas, USVI. This spicy curry is sure to warm you up on a cold snowy day while dreaming of the warm beaches of the Caribbean! My favorite snow day activity is building a fire and having a picnic dinner on the floor in front of the fireplace!
