With winter well underway, we reached out to some friends and colleagues for their favorite Snow Day recipes and activities. The next time you’re snowed in – or just looking for a cozy day at home – try out some of these recipes and enjoy!

“I live in Revelstoke, BC, Canada - where snow days are a regular occurrence in the winter. If I am not outside enjoying the white fluffy stuff by skiing or snowboarding - you can find me in the kitchen baking. There is something comforting about sipping a hot coffee and watching the snow fall while baking some tasty treats. My favorite is these naturally sweetened black bean brownies, which also happen to pack well for your winter activities.”

“I live in Grandview on Hudson, New York overlooking the Tappan Zee Bridge so it gets windy here. I love to batch cook when it snows. This Roasted Vegetable Lasagna is the perfect recipe for that as I can roast extra veggies for a Roasted Eggplant and Zucchini Soup and extra Cashew Pesto as a dip with veggies. These are all recipes my family loves. We would play games like Rummikub and watch movies or binge watch a new Net-Flix series.”

And on a snowy day, it makes it a great cozy dinner idea. Lately, my favorite snow day activity is simply to put on my snow boots, bundle up and walk/play around a lake. It's a simple activity but so enjoyable!”

“I’m outside of Philadelphia and we get plenty of snow! While I make buckwheat pancakes most weekends, making waffles takes a bit more time, which I clearly have on a snow day when I’m not leaving the house. They are a warm, fluffy and comforting breakfast to give you energy for shoveling. While I loved making igloos outside with my siblings all the way through college, having hot chocolate by the fire after shoveling is more my speed now!”
